We love pizza in our house but often the dough can cause Neils stomach to flair up the next day. We also try to limit the amount of dough and bread we all eat. The problem we have is as a household we all love pizza. The twins even love it. We really like the made to order pizza you can get from ASDA because we all like different things and you split the pizza and topping rather than buying two different pizza’s. Then I discovered tortilla pizzas and I just love them.
The tortilla pizzas are really easy to make and cook really quickly so you can make one each. This save any arguments over topping and everyone can have exactly what they like. We have tried lots of combinations and also different tortilla wraps. My favorite are the Mediterranean herb wraps from Aldi with lots of vegetable and meats.
To make the tortilla pizzas is really simple. Apply you sauce to your tortilla, we have used tomato puree in picture above but have also tried bbq sauce as well which is equally as nice. You then add your topping. We have grated cheddar on all our so far and then added all sorts of different topping from the list below. You can add what ever you like best
Once topped its time to cook. You need to place your tortilla on a baking tray with some baking paper to stop it sticking. You need the oven on quite high to get some crisp on the tortilla we have been popping them in around gas mark 6. This made the edges super crispy but stopped a super soggy bottom as well.
These tortilla pizzas are so moorish and because they aren’t made with super heavy pizza dough they are really light to eat. I made two for my tea last night and devoured them.
These are a great light easy to make meals, I know they will certainly be on our weekly meal plans.
