Wednesday morning and I decided to agree to making the boys banana pancakes. I was tired and just wanted an easy life, I didn’t think for a second what have I let myself on for. I quickly went off to search for a recipe and came across quite a few great recipes for banana pancakes. I looked at a few but chose the simplest. Anything for and easy life yesterday.
Although mine were not 100% gluten free because I used normal baking powder these are super easy to make and gluten free diet or not they will be part of our recipe book as they are amazing. I was extremely surprised how good they tasted because I thought they would be a bit like and omelette. The boys absolutely loved them and demolished all the mixture.
Recipe and Method below.
1 large ripe banana (mine had gone brown)
2 medium eggs
pinch of baking powder (gluten free if you want gluten free pancakes)
Splash of vanilla extract
fruit, nut, yoghurt to serve
How to make
1, Using a fork mush up your banana so it’s like a puree, really give it a good mush. This is why bananas that have gone brown work well as they mush really easily.
2, Add all other ingredients and mix well, you can whisk your eggs before hand but I just chucked it all in one bowl and saved on the washing up.
3, Add a little oil to the pan, we have non stick and I still needed a little to stop it sticking. (looks like loads in the picture but was only a tiny drop). Spoon you mixture in carefully as it spreads. I used a serving spoon and one spoon was just the right amount. Turn pancakes once brown on one side, you will need a spatula it was quite tricky.
4, Once cooked serve with what you like, we picked some sliced of strawberries but you could add some nuts, yoghurt the combinations are endless.
As you can see the boys thoroughly enjoyed these banana pancakes this is definitely one recipe we will make again. It was really simple to make and took minutes so no excuses.
