This dessert is a super simple boozy dessert. Its great for St Pats day as we all know the Irish like a drink or two maybe three. The Irish cream liqueur that you use is also really nice served over ice so would also make a great after diner drink.
Coming from an Irish family this will certainly be received well on St Pats day at our annual family gathering along with some Ballycastle and Dark Chocolate Mousse. We always have a toast to my Grandma and Grandad but I’m not keen on neat whiskey so the Cream liqueur is perfect for me.
This recipe is super simple and quick to make. You just need a blender, pan and glasses for serving. It great for diner parties as can be prepared in advance and stored in the fridge.
Serves: 4 people Prep time: 15 minutes Cooking time: 10 minutes British Vegetarian
Ingredients:
1 small banana
300ml Irish cream liqueur
100ml white rum
100ml semi-skimmed milk
2 tbsp fudge sauce (see below)
4 balls premium vanilla ice cream
Cocoa powder
For the fudge sauce:
115g unsalted butter
275ml double cream
140g brown sugar
Dash lemon juice
Method:
Place 1 small banana into a liquidiser. Add 300ml Irish cream liqueur, 100ml white rum, 100ml milk, 2 tbsp fudge sauce (see recipe below), and then blitz really well.
Place 4 small balls of premium vanilla ice cream into 4 frosted tumblers. Pour over the cocktail and serve, dusted with cocoa powder.
For the fudge sauce:
Make the sauce by placing the butter, sugar, and cream together into a saucepan and bring to the boil. Whisk well until you have a thick fudgy sauce. Remove from the heat and add the lemon juice.

Omg you know the way to my heart I love a bit of Irish cream (ok maybe more than a bit!) will definitely have to give it a go as a pud!
