We love Lamb so this French Lamb Bake recipe is definitely on our short list this Valentines evening. Its quick to cook so great if you are out working all day and doesn’t look to expensive to make neither.
Being a mum of 4 the days of going out for posh fancy meal on valentines is over,. In fact going out as couple for any meal is just impossible its usually the while tribe. We do however love to cook at home and make food that we enjoy. Pop the kids to bed open a bottle of wine and have some us time. This recipe looks like one of the those perfect Saturday night in for two kind if meal. Followed by a great dessert of course and the sharing cookie looks amazing.
French Lamb Bake
Prep time – 5 mins
Cook time – 30 mins
6 x lamb chops
2 x cloves garlic
1g fresh chopped rosemary
300g peeled Butternut squash
1 x red pointed sweet pepper
35ml Rape seed oil
Sea salt and black pepper
Preheat the oven to 200c/400f/gas 6
Cut the pepper in half lengthways – remove seeds and chop into 3cm chunks
Chop the butternut squash into chunks the same size
Put them both into a small roasting dish – drizzle over the oil and roast for 30 mins
Meanwhile peel and finely chop the garlic
In a small bowl add mix the chopped rosemary, garlic and honey
Season with a little salt and some black pepper
Put the lamb chops in a roasting dish spread the honey mix over the top of the chops
Roast in the oven for 20 mins
Serve on a bed of the roasted vegetables
