I have done some batch cooking for over Christmas. We tend to eat quick and simple food and sometimes it’s not so healthy and boring. So I have made some Lamb Curry, Vegetable soup and pasta sauce. Batch cooking is great and means you have good quality, excellent tasting ping meals or sauces anytime. Which means more time to have fun with the family.
Lamb curry is really simple to make and you can make it as spicy as you choose. We use all fresh ingredients and spices for ours. To serve we usually have some Naan Bread or pasta. I know you usually have rice but are not big lovers of rice in this house.
Tin of chopped tomatoes
2 medium onions
Fresh Chilli (how many what colour and seed in or out depends how hot you like it)
6-8 good size mushrooms
Bag of spinach
Tin of chickpeas
1 tsp Ground Corriander
1 tsp Ground Cumin
1/2 tsp Tumeric
1/2 tsp Ginger
1/4 tsp cloves
1/2 tsp mustard
1/4 tsp cayenne/chilli powder
Brown your lamb in a large saucepan. You just want to brown it and seal it not cook it so it will only need a few minutes.
Dice one of your onions into small pieces, place In the pan with a drizzle of oil. Add you curry spices and soften the onions and garlic. Mixing all together.
Using an couple of lamb stiok cubes and a little bit of boiled water (about half a cup) deglaze the pan and pour in the slow cooker. This makes sure you don’t lose any flavours.
Chop the peppers, tomatoes, mushrooms and other onion into chunky pieces and add to your slow cooker. Add you tin of tomatoes.
Cook on high for about 5 hours. (Our is sometimes on 6-7 hours depending what time we eat ) Stir occasionally.
You need to add your chickpeas about 1 hour before your eating to cook.
Add the spinach 15 min before eating. You place it all on top under lid and it will wilt down in not time. Just stir through the curry before eating.
This recipe makes enough for 4 good sized bowls of curry. We don’t really eat rice so we tend to eat it on it own or with some naan bread. The half you don’t eat freezes well and actually tastes even better than when just cooked.
Left Over Lamb
If you have left over Lamb you can turn it into a curry using the above recipe. Do the onions garlic and spices in exactly the same way. Chop all your veg up and add to slow cooker. Add you Lamb and cook for about 2-3 hours as you only want it all to wilt down and marinade. Do the chickpeas 1 hour before and spinach 15 minuets before as above..
