I have been trying out our new stand mixer because I have always wanted to make my own Eton Mess and I have never made meringues before. I love baking and cooking home cooked food. I never knew they were so easy to make. It did take two tries but that’s because I didn’t find the right recipe. Once I had found the right recipe it was really simple. What I didn’t know was you can make flavoured meringues just as easy. So you know what I will be experimenting with next.
To make Eton mess is really simple you can actually buy the ingredients and just assemble it. You can also be brave like me and make your own meringue. from egg whites.
2 egg whites (this made 4 good sized meringues)
117g caster sugar
1/2 tsp vanilla extract
First of all pre heat your oven on gas mark 1 and line a baking tray with baking parchment.
Then whisk the egg whites until they are stiff. This is when you can pull up peaks with the whisk and they stay up and do not flop. Next add half of the sugar and whisk again till stiff and shiny. Then add the remaining caster sugar and extract and whisk again till stiff.
I then used a large metal spoon to make four big meringue circles on the lined baking tray. You can use a piping bag and do it really neat if you choose to.
You then place them in the oven and cook for 1 hour. Once cooked you switch the oven off and open the door slightly to let them cool in the oven. They take about 30 minutes to cool.
To make the Eton mess you will need:
Meringues (cooked fresh or bought)
Fresh cream (whipped)
Strawberry sauce (we blended some fresh strawberries for ours)
Chocolate sauce or nuttella optional
To construct your Eton mess you need a nice bowl or large glass. Crunch your meringue into cm size pieces. You then start to layer your mess so place meringue in the bottom a spoon of cream, some strawberry slices a drizzle of sauce and chocolate if you choose. Them repeat the layers till filled. You can choose to do the layer in any order that suits you.
We just chucked all ours in a bowl as the kids just wanted to eat it. If it was a special meal I would layer I in mice glass bowls.
We also did one with banana because Jack doesn’t like strawberries he loved it especially with the Nutella. You could also add a toffee sauce to this to make it even yummier.
