Neil has been struggling with his stomach recently he has B12 deficiency and is awaiting various tests. We are experimenting with different foods to try and help keep his stomach settled and avoid breads and doughs. Pizza is certainly off the menu for a while. We wanted to mix thing up a little instead of pasta or something with potatoes.
I saw a burrito recipe but decided to adapt it and make our own salsa chicken with roasted Mediterranean vegetables and this is what came out. It’s really tasty and filling and a great alternative to plain old chicken and chips type meals.
2 Large Chicken Breasts
2 -3 large bel peppers (any colour)
Large Red onion
1 large Courgette
5-6 baby tomatoes cherry or plumTaco Seasoning (you can make your own)
1 jar salsa sauce (or again make your own)
1, Chop all you vegetables into chunky size piece you don’t want them to disintegrate.
2, Take a large baking tray and place the chicken breast in the centre.
3, Add taco seasoning to the chicken and rub in both sides.
4, Add the vegetable to the side of the chicken drizzle with olive oil and season. You can add some smoked paprika for additional flavour if you like.
5, Pour Salsa sauce over the chicken.
6, Place in a pre-heated the oven and cook for about 35 minutes on gas mark 6. You are looking for the vegetables to be soft and some burning on the edges.
Tip: If you like you vegetable well roasted I would take your chicken out and put your vegetables back in for another 10 minutes or so.

Make your own Taco seasoning – Just mix 1tbsp Chilli Powder, 1/4tsp Garlic powder, 1/4tsp Onion powder, 1/4tsp crushed red pepper flakes, ¼ tsp dried oregano, ½ tsp paprika, 1 ½ tsp ground cumin 1tsp salt, 1 tsp black pepper.
