Homemade Chicken and Leek Pie
We have been buying or meat in bulk the last few months from a local meat market. Its great value for money and we bought 5kg of chicken and though Chicken and Leek pie would be a good recipe to use some in.
We made this one Sunday afternoon it was really simple and quick to prepare and was so much more filling than a plate pie your would buy from the supermarket but cost around the same.
2-3 chicken breasts
2-3 leeks depending on size
300ml double cream
Packet of ready rolled puff pastry
1, Pre heat oven to around 180-200c depending on your oven.
2, Slice leaks and mushrooms.
3, Add leeks to pan with some oil or butter and start to soften them after a few minutes add the mushrooms and then let both soften making sure not fry them just sweat them down.
4, Slice chicken into small cubes of slices and fry off in a pan making sure no pink is left visible.
5, Add the chicken to the leeks and mushrooms the add the cream and chicken stock.
6, Bring to boil and simmer and allow to reduce for a few mins till you have a nice thick creamy texture.
7, Transfer pie filling to and pie fish.
8, Place puff pastry over the pie dish and give it a quick brush with milk or egg wash.
9, Cook for about 20 mins till pastry is golden brown.
We used pre bought and rolled puff pastry it cost £1 and is far easy than making your own puff. You can of course use shortcrust as well and either home make it of again its only a £1 for ready made ready rolled. I suppose it all depends on time and baking skills.
