I have been struggling to eat properly and healthy recently with being so busy. Looking after the little men, the older two and working I have been skipping meals and then when I am hungry don’t have time to make anything proper to eat. That’s when I overheard some people talking about soaked oats and thought that sounds really yummy. I knew I could prepare these at night and I would eat them on the go whilst doing things in the morning. I also thought they would be good for Kaitlin to try as she is getting bored with cereals everyday and likes yoghurt and porridge.
This is a great spin on porridge and provides something different but still provides the stodge to fill you up for the morning.
How to make
Fruits of your choice (I used frozen summer fruits as good value for money and no waste)
Natural yoghurt (you can use flavoured if you wish)
Drizzle of honey (not necessary but I love honey with porridge and yoghurt)
You take a small bowl and layer the ingredients starting with oats on the bottom then some yoghurt a and fruits more oats and then yoghurt a on top and I used some fruit to decorate.
You leave the oats overnight to soak (make sure to pop Clingfilm over the bowl to stop the yogurt forming a skin). They need at least a few hours if you can’t do overnight to get the best tasting yummy oats.
As mentioned above you can use flavoured yoghurt with fruit already in. You can also mix and match your fruit for taste or maybe even add some crunchy nuts or seeds to the top for added texture.
This is a great breakfast it’s also filling and certainly got me through the day. The thing I like is it isn’t chocolate or crisps or anything else I shouldn’t be snacking on. I am going to try flavoured yoghurt though next time and slightly less oats to suit my taste. This is a recipe you need to try a few times to find what works best for you and your taste buds, but definitely one to have a go at.
