Homemade Chicken and Vegetable Soup
You don’t have to spend a lot of money to feed a large family with good wholesome food, we eat cheaply and healthy all the time. You just need to get the bargains while you can and use what ingredients you have leftover in the freezer. I made this Chicken and Vegatbale Soup for all the family (6 of us) for about £2.50 (my chicken was from the meat market 12 legs for £5 we used 3 and I got my veg whoops and had some frozen veg from my last whoops trip)
In the recipe I used some carrots and leeks which I got whoops the night before from the supermarket and they cost 20p for over 1kg of carrots and 6 leeks so I have chopped what I didn’t use and popped in freezer bags for my next soup or stew. don’t be scared to get those whoops fruit and veg items when they are really cheap you can prepare them and freeze most things to use another day.
3 chicken legs (you can use whatever chicken you have in or can get cheaply)
2 big carrots
half a swede
Chicken Stock cube
1, You place the chicken legs in the slow cooker at the bottom.
2, Add all your vegetables chopped up into chunks not to small probably about 1-2 cm in size.
3, Add the stock cubes and fill with water so you can just see it probably about 2/3 of a kettle full.
4, Pop lid on the slow cooker and cook on high for 4-5 hours until the vegetables are soft and tender.
5, Remove the chicken blend the vegetable until smooth.
6, Strip Chicken from the bone and add back into your soup or sprinkle evenly on each portion (we do this as the kids sometimes just want soup).
Serve your soup with crusty bread we made our won but you can buy it from the supermarket for as little as 50p.
This shows you can feed your family good healthy food for a reasonable costs and we had enough left over after all having a large bowl for the twins dinner today they loved it at only 2 years old this really is a dish for the whole family.
